I haven't made this recipe enough to be good at it. My mom makes it look simple, but my peanut butter sugar candy always looks like I made it with one arm tied behind my back. Spoon some powdered sugar into a small bowl, about 1½ cups. The measurement doesn't have to be exact, because the main thing you want to accomplish is getting the milk-to-sugar ratio right. Build a small "well" in the center of your powdered sugar and add milk in at about a tablespoon at a time, mixing it slowly as you go. Don't add the milk too quickly. Stir the mixture around until it clumps and thickens like a dough. Add milk as needed, and if it gets too wet, just add more sugar. Start mixing with a spoon, and as it clumps into a "sugar dough", use your hand to mix. Once you get a "doughball" of sugar, "flour" a flat surface with powdered sugar and place your doughball of flour on it. Flatten the dough with your hand, adding sugar as needed to keep it from sticking. Turn the sugar dough and flatten it out by hand and then use a rolling pin to flatten and spread the dough until it is about the thickness of a tortilla. Use a spatula to spread a thin layer of creamy peanut butter over the entire surface of the sugar. Then carefully roll the sugar up from one side to the next, creating a pinwheel of sugar and peanut butter. Dust with sugar as needed to keep the log from sticking. Knead the peanut butter sugar log and press and pull and turn to make it as long as possible without tearing. Use a knife to cut the log into candy pieces about ½" in length. Set the candy aside on a plate and it will firm up over time. Place it in the fridge and it will firm up faster. Make as much candy as you like, but don't go crazy!--it's a bunch of sugar. It's a nice treat, but definitely one you want to eat in moderation. I hope you like this candy, it's one of my childhood favorites. These cream caramels are so delicious that they are dangerous. You won't want to quit eating them. They are great for the holiday get togethers. Here's the recipe: 2 cups sugar 2 cups heavy cream 1/2 cup butter 1/4 cup corn syrup Coarse salt, if desired Mix together butter and half the cream and the syrup. Start warming. As butter is melting add the sugar. Stir and cook to a boil. Add second cup of heavy cream. Stir and bring to a boil. Be careful that you don't let it boil over. Monitor temperature with a candy thermometer and cook until it reaches 245 degrees. Pour into a buttered 8x8 pan. If desired, sprinkle coarse salt over top. Cool, cut into 1 inch square pieces and wrap in wax paper. Enjoy

Lin and Mei are joined by their new helper and candy expert, Marion, creating a design we picked from YouTube comments. The most popular suggested design in YouTube comments was a dog 🐕, so we decided on an Akita dog, which is a Japanese large mountain dog breed similar to the husky. The Japanese Akita is typically orange in colour, unlike the American Akita which has mixed coats in different colours. This breed became popular online because of Faithful Hachikō. From Wikipedia: ⚆ _ ⚆ “In 1924, Hidesaburō Ueno, a professor in the agriculture department at the University of Tokyo, took Hachikō, a golden brown Akita, as a pet. Ueno would commute daily to work, and Hachikō would leave the house to greet him at the end of each day at the nearby Shibuya Station. The pair continued the daily routine until May 1925, when Ueno did not return. The professor had suffered a cerebral hemorrhage, while he was giving a lecture, and died without ever returning to the train station in which Hachikō would wait. Each day, for the next nine years, nine months and fifteen days, Hachikō awaited Ueno's return, appearing precisely when the train was due at the station. Hachikō attracted the attention of other commuters. Many of the people who frequented the Shibuya train station had seen Hachikō and Professor Ueno together each day. Initial reactions from the people, especially from those working at the station, were not necessarily friendly. They use no machines (beyond a stove to boil sugars) and make the candy by hand. Their candy is made with simple ingredients and comes in a huge variety of flavours --- we recently tried Pina Colada, for example. The flavour of this dog candy is tangerine, which is a mini-sized citric fruit like an orange. It's Christmas Time and that means it's time to make homemade candy. Welcome to my kitchen where I show you how to make old fashion pineapple fudge, one of Old Guy's favorites. Here's the recipe: 1 cup drained crushed pineapple 3 cups sugar 1 cup evaporated milk 2 Tbs butter 2 tsp lemon juice Combine pineapple, milk and sugar. Stir while cooking, bringing to a boil. Let boil until reaching 236 degrees (soft ball stage). Remove from heat, add butter and lemon juice without stirring in. Allow to cool to 120 degrees. Stir by hand or using a mixer until mixture is no long glossy, but dull. Pour into heavily buttered 8 in. square pan. Cool and cut. Store in airtight container.

The next time you have plain, leftover mashed potatoes, make this oldie (but goodie) sweet peanut butter treat! INGREDIENTS: 1/3 cup russet potato (peeled, boiled, and riced or mashed) 1 teaspoon vanilla extract 3-4 cups powdered sugar 2-3 tablespoons peanut butter 1 tablespoon unsweetened cocoa powder STEPS: 1.) Combine cooked potato, powdered sugar, and vanilla extract in a bowl, until the mixture forms a putty-like dough. 2.) Dump the candy dough onto wax paper sprinkled powdered sugar. Use a rolling pin to roll into a rectangular shape. Trim to form straight edges. Spread an even layer of peanut butter across the top. Slowly roll the candy from one short edge to another. Wrap with the wax paper and chill until firm. Slice rolled potato candy and enjoy! 3.) Roll excess candy dough back into a ball. Pinch off small balls and shape to resemble tiny potatoes. Coat with unsweetened cocoa powder. Chill to firm or enjoy right away.
